'MADE FROM SCRATCH' MONDAY - COCONUT LADOOS (BALLS!)

COCONUT LADOOS
Ingredients:
400 gms sweetened condensed milk (gluten free)
500 gms dried coconut powder

Method:
In a thick bottomed pan, mix 400 gms of condensed milk with 400 gms of dried coconut powder. Keep aside 100 gms of coconut powder.
On a medium flame, cook this mixture till it thickens and starts leaving the sides of the pan. Keep stirring continuously as there are chances of this mixture sticking to the pan.
Remove from heat. Cool. Make balls of this mixture and roll them in the remaining dried coconut powder. Garnish and serve.

Note: You can even add permitted gluten-free food colors to make it more attractive.

  2. I remember eating these laddoos long time ago. Thanks for the memories, Janu.

Now, let me think if I should make it. What is dried coconut powder? Just scraped coconut, right?

    Joy always,
    Susan

  3. Oooh Janaki...how is it that I always happen to come upon a recipe for something that would go so well with my morning coffee? These sound wonderful! And yes, please let me know exactly what 'coconut powder' is because I will give them a try. We will have to make our own non-dairy sweetened condensed milk, but since it will already be on the stove and hot, it would be nothing to continue on and just make these lovely coconut laddoos! Thanks for participating this week :)
